Without spending two days making a pot of curry, I will now be able to cook a simple dish of chicken wings that’ll satisfy a curry flavor craving. All I would need to do is figure out a way to crisp up the skin more.

My Story
Several months ago, I made some curry chicken wings with turmeric, but it didn’t have the curry flavor that I was used to. As a result, I went on a search for an alternative recipe.
Inspiring Recipe
I was happy to find an easy recipe, Curry-Spiced Chicken Wings, on the Allrecipes website.
First Try
When I decided to purchase a multipack of chicken wings from Costco, I jumped at the opportunity to try out the new recipe.
Ingredients to Use
Starting with 30 chicken wings, I increased the rest of the ingredients on the default recipe to the following:
- 2 1/2 tablespoons of oil
- 2 1/2 tablespoons of soy sauce
- 2 1/2 tablespoons of green onion
- 3 cloves of garlic
- 1 1/4 teaspoons of curry powder
- 1/2 teaspoon + 1/8 teaspoon of ground turmeric
- 1/4 teaspoon of ground black pepper
Due to availability, I had substituted the vegetable oil with avocado oil. Also, for convenience, I had chopped the green onions instead of mincing them.
Lastly, due to a recipe reviewer mentioning that their wings had subtle flavor, I decided to round up the amount of garlic by 1/2 a clove and black pepper by 1/8 teaspoon. (In case you’re wondering, I refilled the rainbow peppercorn bottle with black pepper cloves.)

Steps to Prepare
After marinating the chicken for 3.5 hours, I adjusted two of the remaining three steps in the directions, as follows:
- Step 3 – To hold the wings in the oven, I used a baking pan since I didn’t have a baking dish large enough to fit everything.
- Step 4 – After 25 minutes of baking, the chicken wings weren’t browned yet, so I added another 15 minutes.



Time to Eat
After enjoying the curry aroma from the oven, I couldn’t wait to taste the chicken wings!

When I first tasted a wing, it had good flavor, but once I bit further into the meat, I found it to be bland. Also, the skin didn’t reach the right level of crispiness.
Second Try
For the second round, my focus was to spread the flavor to the meat and crisp the skin.
Ingredients to Use
With 33 chicken wings this time, I added a little more of the remaining ingredients than what I had used during the first attempt, as shown below:
- 2 1/2 tablespoons + 1/4 teaspoon of oil
- 2 1/2 tablespoons + 1/4 teaspoon + 1/8 teaspoon of soy sauce
- 2 1/2 tablespoons + 1/4 teaspoon + 1/8 teaspoon of green onion
- 3 cloves of garlic
- 1 1/3 teaspoons + 1/8 teaspoon of curry powder
- 3/4 teaspoon of ground turmeric
- 1/4 teaspoon of ground black pepper
Because I wanted more flavor for the wings, I rounded up to the nearest cooking measurement for all the ingredients except for the oil.
Steps to Prepare
After marinating the chicken for a little more than 2.5 hours, the only other modification I made as compared to the first try was as follows:
- Step 4 – I added 10 minutes to the baking time, totaling 50 minutes.
Time to Eat
Again, I couldn’t wait to taste the wings!

There was definitely more flavor in the wings. However, though the skin was drier, they weren’t quite crispy yet.
Since I was able to increase the seasoning in the recipe with positive results, I will work on the skin next time by trying one of the following steps:
Continuous Improvement
- Bake the wings for 55 minutes.
- Bake the wings for 50 minutes and broil them for 5 minutes.
Since I read the reviews for the recipe, I knew to watch out for the flavoring and skin texture. What I would share with my younger self would be the following:
