My Story
As I was searching for a way to improve another dish using edamame pods, I came across a simpler recipe using garlic in an oven. It was a bonus to be able to include flavorful garlic in a vegetable dish, while freeing up a burner on the stove!
Inspiring Recipe
The winning recipe that I found was Simple Roasted Edamame from the Allrecipes website, a place I’ve referenced many times.
First Try
Since I usually have the five ingredients listed in this recipe, I didn’t have to plan much prior to making the dish.
Ingredients to Use
With 1 pound of edamame, I increased the default recipe and added the following:
- 2 1/2 tablespoons + 2/3 teaspoon of extra-virgin olive oil*
- 3 cloves of garlic
- 1 1/3 teaspoons of sea salt
- 2/3 teaspoon of ground black pepper
* For the olive oil, I used a garlic-flavored version that I normally buy.

Steps to Prepare
With only three steps, I just tweaked the second and third steps.
For Step 2, I tossed the edamame in a glass container because my large bowl was used for something else.
As for Step 3, I increased the roasting time to 27 minutes, in proportion to the extra weight in edamame, as compared to what was noted on the default recipe.

The salted, roasted garlic on the edamame pods was delicious! My younger son even enjoyed it with rice.
Second Try
For the second batch, my goal was to brown the pods more.
Ingredients to Use
During the second round, I used the same ingredients as the first batch.
Steps to Prepare
The only change I made in the process this time was to stop the oven at 26 minutes because the edamame started to brown sooner than the first round.

Time to Eat
As shown below, some of the ends of the edamame pods turned golden brown.

If the dish was less salty, I would’ve enjoyed it more.
Since I will definitely be using this recipe in the future, I’ll try to make the flavors of this dish more even by doing the following:

- Mix the ingredients longer until the pods are well-coated.
By going through the experience of locating a better way to char edamame pods, I realized the following that I would like to share with my younger self:
